I had heard about it from one of my favorite blogs, Peanut Butter Fingers, but it wasn’t until my boss recommended the pairing that I was finally intrigued enough to give it a try. I mean, really…watermelon and feta cheese? Make no mistake about it though, this combination is amazing; the saltiness of the feta cheese combined with the sweetness of watermelon and honey and the sour of the lemon juice..it’s a play-date for you palate.
Watermelon and Feta Salad
Ingredients:
- 1 tspn olive oil
- 1 tsp honey
- 1 tsp lemon juice
- Salt and Pepper
- 2.5 cups Mixed greens, spinach or arugula
- 1/4 cup feta
- 1/8 cup red onion
- 1 cup Watermelon
Directions:
- In a small cup or miniature mixing bowl, combine olive oil, lemon juice and honey. Whisk until mixed thoroughly. Set aside
- For presentations sake, create some melon balls and throw them on top of your salad. Top with red onion and feta.
- Pour dressing over salad. Add salt and pepper to taste
- Enjoy! (For serious though, that’s all there is to it)
This salad is honestly incredible and a break from the ordinary vegetable rut. It doesn’t offer much substance protein or carb wise (lets get real people, its fruits and veggies), so I’d recommend having it as a side to something else. Not only does it win points for aesthetics, but the fresh feel of this ‘lad would go perfectly with grilled steak (if you’re into that sort of thing), grilled chicken and corn on the cob or a potato salad.
