Frittata Friday

Breakfast is my favorite meal of the day, I go to bed thinking about it. When people tell me they don’t eat breakfast, I really can’t understand it. Eggs? Bacon? Granola? Fruit?…and those aren’t even the countless carb-loaded options that I can’t touch.

Before I realized I had a gluten sensitivity, I used to down countless bowls of cereal. Then I moved onto greek yogurt and gluten free granola before I figured out I’m sensitive to dairy too. These days it’s a lot of scrambled eggs/whites, turkey bacon and avocado, but my digestive system is all about it. Never gets old. AND THEN a couple of weeks ago Tyler mentioned breakfast for dinner, which led to me scouring pinterest and magazines for ideas. Have you ever made a frittata? It’s the simplest thing, it’s delicious AND it’s Paleo-friendly, for those of you who go that route.

Butternut Squash, Bacon, and Spinach Frittata

Makes 6 servings

 Ingredients:

  • Coconut Oil
  • One medium Butternut squash
  • 8 slices of bacon, cooked
  • 2+ cups spinach
  • 6 eggs
  • 1/2 can whole fat coconut milk
  • Salt, pepper and oregano to taste

Directions:

  1. Preheat oven to 350 F
  2. Coat the bottom and sides of a tart or pie dish with coconut oil (this is simply to keep things from sticking and burning)
  3. Peel your squash, and cut into 1/4 inch cross sections, lay enough down so that they cover the bottom of the dish
  4. Crumble 4 pieces of bacon on top of your squash (there’s no shame in doubling the bacon in this recipe, if that’s what you’re into. Trust me, I am)
  5. Add spinach as the next layer
  6. Butternut squash again, followed by bacon (either in strips, or crumbles)
  7. In separate bowl, whisk together eggs, coconut milk and seasonings. Pour this mixture over your dish to cover all layers.
  8. Pop in the oven for 40 minutes and enjoy! (Note: frittata is done when the eggs on top are no longer runny)
