Some Like it Hot

This post has absolutely nothing to do with the movie of the same title, and everything to do with sriracha sauce, specifically Sriracha Chicken. Now that we’re starting to have some seasonally appropriate weather, I’m craving meals with a little spice that warm me up, hence the sriracha. If you’re suffering from a bit of the common cold, this will serve double duty by clearing out your sinuses as well 🙂

We ate the chicken over black quinoa with steamed broccoli, and the best part was that this entire meal only took 20 minutes from start to finish! Easy and delicious, a win in my book. This recipe is definitely going on the regular dinner rotation.

Sriracha Chicken

(Adapted from Kim’s Healthy Eats)

Ingredients:

  • 2-3 chicken breasts, diced
  • 2 tbsp cooking oil
  • 1 clove of garlic, minced
  • 1 small vidalia onion, diced
  • 1/4 cup sriracha sauce
  • 1/4 cup teriyaki sauce
  • juice from 1 lime
  • 1-2 tbsp agave
  • optional toppings: sesame seeds, cilantro, green onion

Directions:

  1. Make the sauce by whisking together sriracha, teriyaki, lime juice and agave. Taste and adjust to your liking.
  2. Heat the cooking oil in a large skillet on medium heat for 1 minute.
  3. Add garlic and saute until fragrant, about 1 minute, discard garlic.
  4. Add diced onion and saute a few minutes, until soft and translucent.
  5. Add chicken and cook until browned, about 5 minutes. Mix in the sauce, turn heat to medium-low and cook another 5 minutes allowing the sauce to thicken. Stir occasionally.
  6. Top with cilantro leaves, sliced green onion and/or sesame seeds. Enjoy!
