Shower Broccoli Salad

 

It would be wrong not to share my favorite recipe from the shower this past Saturday. This broccoli salad is a great cross between veggies and delicious, but the best part is that it doesn’t take much time at all. An added plus? Even most men AND broccoli haters enjoy it. A downer-people with nut allergies and vegetarians might not feel as strongly.

Shower Broccoli Salad:

Time: 25 Minutes

Difficulty: Easy

Serves as a side for a bunch of hungry luncheon women, and then some. 

Ingredients-

  • 2 medium bunches of broccoli
  • 8 ounces of bacon-usually half of a normal sized package (substitute with turkey bacon)
  • 1 red onion
  • 3/4 cup raisins or craisins
  • 1/2 cup roasted peanuts (or chopped almonds)
  • 3/4 cup miracle whip (lighter than mayo)
  • 1/4 cup sugar (substitute for Stevia or another light natural sweetener)
  • 2 tbsp white vinegar

Directions-

  • Cut broccoli into very small, bite sized pieces, include both stems and crowns. Place in large bowl.
  • Cook bacon to desired crispness (but be sure the bacon is crisp enough to cut or crumble). Let cool, pat with paper towel, chop and add to bowl.
  • Add chopped red onion, raisins and peanuts.
  • In a separate bowl, combine the miracle whip, sugar and vinegar. Pour over the salad.

Ta-da! THAT’S IT. I normally don’t use all of the dressing because I really like the crunchiness and the tastes of all the other ingredients together. Try adding a little at a time and stirring until you have just enough flavor. If you make this before and leave it in the fridge overnight, it’s even tastier the next day. Enjoy!
